First, our farmers make a cut on the flower or bud of the coconut palm, and the liquid nectar is collected. The collected nectar is gently heated to remove water and results in the golden brown crystals. It can be substituted in a 1:1 ratio with any other sugar, providing a subtle sweetness, with a slight caramel flavor. Coconut Sugar is perfect for baking brownies, cookies and cakes.
